[BCH] Rumiano Cheese Co, in Crescent City, is the oldest family-owned cheese company in California. Peppato is one of their specialties: a dry jack with whole peppercorns, cellar-aged nine months to achieve a medium-to-sharp nutty flavor. Peppato won the 2005 United States Cheese Championship for flavored hard cheese and placed fourth in the 2006 World Cheese Championship. This full wheel weighs about 8 pounds. It is a hard cheese which keeps very well, so you can enjoy it for many months!
